Ingredients:
- 3/4 cups flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 1 stick unsalted butter, softened
- 1/2 cup dark brown sugar
- 1/2 cup granulated sugar
- 1 egg, room temperature
- 1/2 teaspoon pure vanilla extract
- 1 1/2 cups quick rolled oats
- 1/3 cup raisins
- 1 cup semi-sweet chocolate chips or chunks
Directions:
- Preheat the oven to 350 degrees. Line cookie sheets with Silpats or parchment paper and set aside.
- Sift together flour, baking soda, salt, and cinnamon.
- In stand mixer, cream together butter and sugars until light and fluffy. Add egg and mix well until incorporated. Add in vanilla.
- Add dry ingredients gradually until they are well incorporated.
- Mix in oatmeal. Stir in raisins and chocolate chips.
- Drop dough aboutt 1.5 inches apart by 2 tablespoons (they will spread a little).
- Bake for about 10-12 minutes. (Take them out just before they look done).
- Transfer to a wire rack and let cool.
